Before harvest, Gaziantep Turkish pistachios that do not naturally split their hard shells on the tree (around 30%) are classified as “Natural (Naturel)”. After harvest, the pistachios go through pre-sorting and cleaning, and then without any size calibration the portion that did not naturally open is mechanically cracked to obtain this product. The pistachios are roasted in their shells with salt at 150°C. The salt content is maximum 0.9%. After roasting, the product is packaged in the requested sizes and weights and shipped to customers. Since this product is not calibrated by size, the kernels vary from small to large. It consists of a blend of 70% naturally split pistachios (Ana Çıtlak) and 30% machine-cracked pistachios. Salted Pistachio 

The turkish pistachios are roasted in their shells with salt at 150°C. The salt content is maximum 0.9%.

The kernels are large in size. Although the outer skin shifts from pink toward a reddish hue, the inner kernel remains approximately 70% green in color. Red Kernel (Mawardi)

This product is made from pistachios harvested between August 15 and 25, then separated from their hard shells and carefully selected.

Boz 2 Turkish pistachio kernels have a slightly pinkish tone on the back of the outer skin and a medium-green interior. They offer a balanced, standard pistachio aroma and flavor. This grade is widely used in the baklava and ice cream industries. In recent years, chocolate manufacturers have also been using Boz 2 kernels more commonly in a range of products. Green 2nd Grade (Boz2)

This product is obtained by shelling and carefully selecting pistachios harvested from late July through August 15. 

Boz 1 Turkish pistachio kernels have a slightly green outer skin and a deep green interior, offering a distinctive, rich aroma and intense flavor. They are a preferred choice for premium baklava and ice cream producers. In recent years, high-quality chocolate manufacturers have also started using Boz 1 kernels in selected products.
